My sweet Grandma Judy bought me a mini donut maker last year and this is the first time I am popping this baby out of the box (horrible grand daughter in law?)
Once I got it out of the box, I knew this was going to be a fun time in the kitchen. So because it is National Donut Day, and because I am doing the 21 day fix program- I had to think of a recipe that would work for the program and still satisfy my need to participate in National Donut Day.
Lemon Blueberry Mini Donuts, 21 Day Fix Friendly
1 cup of oat flour
1/4 cup vanilla protein powder
1 egg
3/4 cup non fat plain greek yogurt
1/4 cup unsweetened applesauce
1 teaspoon baking soda
1 teaspoon baking powder
1 packet of sugar in the raw
1 teaspoon of lemon zest
mix all ingredients together, then FOLD in 1 cup of fresh blueberries.
preheat your mini donut maker per manufacturers instructions. place about a tablespoon or so of batter into the mold and close lid- but don’t press it down!! just let it rest. after 5 minutes remove donuts and repeat process. Batch makes 20 mini donuts.
Icing:
1/4 cup of vanilla protein powder
1 tablespoon of fresh lemon juice
1 tablespoon of agave
mix, mix, mix until smooth. it will look gritty but it will go on smooth and glossy on your donuts. garnish with a blueberry.
