1 lb ground veal
1 lb ground pork
1 TB Italian seasoning
1/2 cup of oat flour
1/2 cup of cottage cheese (you won’t even know its there, helps keep the meatballs moist)
2 large eggs
1 grated garlic clove
2 TB of freshly chopped Italian parsley
Mix everything together but don’t over mix. this makes 16 golf ball sized meatballs. bake at 350 for 15 minutes than take them out and cook the rest of the way through tomato sauce, your favorite, 21 day fix friendly of course. I just used 2 cans of diced tomatoes with a handful of chopped basil, garlic and 3 TB of tomato paste, a bit of sea salt and cooked it down with the meatballs for 30 minutes.
1 serving is two meatballs with 1 yellow container of whole wheat pasta.
